Double Chocolate Muffins

Ingredients
  

2 cups all-purpose flour
½ cup unsweetened cocoa powder
¾ cup sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt
2 eggs (room temperature)
1 cup milk
½ cup vegetable oil
2 tsp vanilla extract
1 cup chocolate chips

Method
 

Preheat oven to 375°F (190°C) and line a muffin pan with paper liners.
    In a bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
      In another bowl, whisk eggs, milk, oil, and vanilla extract.
        Combine wet and dry ingredients gently until just mixed.
          Fold in chocolate chips without overmixing.
            Fill muffin cups about ¾ full.
              Bake for 18–22 minutes until set.
                Let cool 5 minutes before removing from pan.

                  Notes

                  For extra chocolate flavor, sprinkle additional chocolate chips on top before baking. Do not overmix the batter to keep the muffins soft and moist.
