Ingredients
  

8 sausages, skins removed
4 slices bacon, finely chopped (optional)
1 onion, finely chopped
1 sheet puff pastry
1 egg
1–2 tsp mixed herbs
Salt, to taste
Black pepper, to taste
Cheese, grated (optional)

Method
 

  1. Step 1:
Preheat oven to 200°C (392°F) and line a baking tray with parchment paper.
  1. Step 2:
Remove sausage meat from casings and place in a mixing bowl.
  1. Step 3:
Add chopped bacon, onion, herbs, salt, and pepper. Mix well until fully combined.
  1. Step 4:
Roll out puff pastry on a lightly floured surface.
  1. Step 5:
Place sausage mixture in a line along one edge of the pastry.
  1. Step 6:
Brush egg wash along the edge, then roll pastry over filling and seal.
  1. Step 7:
Cut into equal pieces and place on baking tray.
  1. Step 8:
Brush tops with egg wash and sprinkle cheese if desired.
  1. Step 9:
Bake for 20–25 minutes until golden brown and fully cooked.
  1. Step 10:
Cool slightly and serve warm.

    Notes

    You can freeze sausage rolls before or after baking. Reheat in oven for best crispiness. Avoid overfilling to prevent pastry from breaking.
