Ingredients
  

Sweet Potatoes
2 large sweet potatoes, peeled and cubed
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
Beef
500 g (1 lb) beef sirloin or flank steak, thinly sliced
1 tbsp soy sauce (or tamari for gluten-free)
1 tsp garlic, minced
1 tsp honey
½ tsp black pepper
Hot Honey Sauce
½ cup honey
1–2 tsp red pepper flakes (adjust to taste)
Optional Toppings
Chopped cilantro or scallions
Lime wedges
Crumbled feta or goat cheese

Method
 

Roast the Sweet Potatoes
    Preheat oven to 200°C / 400°F. Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until tender and caramelized.
      Marinate the Beef
        In a bowl, combine beef, soy sauce, garlic, honey, and black pepper. Let marinate for at least 15 minutes.
          Cook the Beef
            Heat a skillet over medium-high heat. Cook beef for 3–5 minutes until browned and cooked to your preferred doneness. Remove from heat and let rest.
              Make the Hot Honey
                In a small saucepan over low heat, warm honey and red pepper flakes for 5 minutes. Stir gently, then remove from heat.
                  Assemble the Bowl
                    Divide sweet potatoes into bowls, top with beef, and drizzle generously with hot honey sauce.
                      Garnish & Serve
                        Finish with herbs, cheese, or lime juice if desired. Serve warm.
